Missing Thorn offers a white, a red, a rose and a sparkling, all of which are amazing. Aaron is one of the greatest winemakers the valley has, and his quest to bring the world an NA wine that looks, tastes and smells like great wine was much needed and appreciated.

Winemaking Process
The Barbera grapes are gently whole-cluster pressed to preserve their delicate aromatics, then cold-settled and fermented in stainless steel tanks. No malolactic fermentation is used, ensuring the wine retains its crispness and vibrant structure. Once fermentation is complete, an innovative low-temperature vacuum distillation process removes the alcohol while preserving the natural aromas and flavors. As alcohol removal slightly affects acidity and flavor, the wine is diluted with water and finished with natural flavors to complement the existing profile, resulting in a refreshing and balanced non-alcoholic Rosé.

This 2022 Barbera pours a pale salmon hue with a hint of lavender, reflecting its youthful character. The nose offers an enticing bouquet of ripe boysenberries, wild strawberries, and luscious red cherries. On the palate, the wine is crisp and vibrant, bursting with juicy watermelon, ripe quince, and tangy red cherry notes that create a perfectly balanced, mouthwatering experience.
