The Story

Aaron Pott and Stephanie Honig have spent their lives in wine. But one evening, sharing a meal, they confronted a truth: the very future of wine was under threat. 

Younger consumers were turning away, not because they didn’t love the ritual but because alcohol no longer fit into their vision of a healthy intentional life. Wine had become an all-or-nothing proposition. And too many people were choosing “nothing.” What if that didn’t need to be the case? That question led to a radical idea. What if wine wasn’t defined by its alcohol content, but by its purpose—its ability to connect, to delight, to elevate a moment?

From this idea, Missing Thorn was born.  A new chapter for wine—crafted with the same attention, care, and soul, but without the compromise.

Unlike traditional wines bound by vintages and vineyard rules, Missing Thorn was created with a singular purpose: to craft the most vibrant, premium non-alcoholic wines possible. Each year, Aaron and Stephanie taste their way through thousands of varietals, hand-selecting the grapes that shine brightest without alcohol—those that deliver balance, aroma, and true character. One year that might mean a crisp Albariño-driven white, the next a Riesling-led blend.
