Crisp Bartlett pear, tropical mango, white elderflower, citrus zest, and mineral tension. An award-winning, estate-vinified Austrian sparkling wine (Sekt) finished at 6 bar of pressure.

Crafted in Mittelburgenland, Austria, by the estate Heribert Bayer / In Signo Leonis, Zeronimo Sparkling Select is an internationally acclaimed dealcoholized sparkling wine (winner of the Falstaff Sparkling Wine Trophy and top-rated by Master Sommelier John Szabo). Built on a classic Austrian white wine blend of Grüner Veltliner, Gelber Muskateller, and Rivaner, it undergoes traditional vinification before low-temperature vacuum distillation and a multi-phase aroma recovery loop that re-incorporates the wine's delicate volatile esters.

Bottled with natural cork under a Champagne-grade 6 bar of pressure, it delivers a persistent, ultra-fine perlage and an authentic extra-brut mouthfeel. Balancing aromatic stone fruit, tropical pineapple, and floral elderflower against taut mineral acidity (6.0 g/L) and 23 g/L natural residual sugars, it offers an uncompromised, gastronomic sparkling pour at less than 0.2% ABV (14 cal and 2.3g sugar per 100ml).

Gold-yellow pour with silver flashes, pear and elderflower aromas, taut citrus-mineral core, and a fine 6-bar perlage—<0.2% ABV, estate-bottled by Heribert Bayer in Mittelburgenland.

TASTING NOTES

The Appearance: Shimmering gold-yellow core with bright silver reflections and a vigorous, fine-beaded perlage rising persistently through the glass.

The Aroma: Intensely aromatic, floral, and exotic. Opens with pronounced notes of white orchard pear, ripe pineapple, and juicy mango, interwoven with fragrant Gelber Muskateller florals, white elderflower, and fresh lime blossom.

The Palate: Crisp, taut, and elegant with a dry extra-brut impression. Crisp green apple, white peach, and light citrus lead the entry, balanced by cool mineral tension, a creamy mousse from the 6-bar effervescence, and clean malic structure.

The Finish: Long, refreshing, and mineral-driven, leaving a sharp citrus lift of lime zest, subtle elderflower perfume, and a dry, mouth-watering finish.

PAIRS WITH

Raw Bar & Seafood: Exceptional paired alongside fresh oysters with mignonette, tuna tartare, sea bass carpaccio, or steamed lobster tails.

Frequently Asked Questions — Zeronimo - Sparkling Select

Expert answers to common questions about non-alcoholic options, ingredients, and delivery across Canada.

How should I store premium de-alcoholized wine after opening?

Because alcohol acts as a preservative, de-alcoholized wines (like Benjamin Bridge or Dr. Zenzen) should be tightly sealed, refrigerated immediately after opening, and consumed within 3–5 days for optimal flavor.

What are 'Proxies' or 'Alternative' wines?

Proxies are sophisticated, non-alcoholic beverages crafted using tea, juices, spices, bitters, and vinegar to mimic the complexity, tannins, and acidity of wine—without relying on fermentation.

What are the benefits of joining the Søbr Wine Club?

Members receive exclusive access to new releases, monthly curated selections, and special member pricing. It is the easiest way to explore our curated selection of non-alcoholic wines without the guesswork.

What is the difference between '0.0% ABV' and 'Non-Alcoholic?

Products labeled 0.0% ABV contain absolutely no alcohol. Some products labeled 'non-alcoholic' may contain trace amounts of alcohol (less than 0.5% ABV), which is similar to the levels found in ripe fruit or fruit juice.

Is 0.5% really alcohol-free?

In Canada, any product containing less than 1.1% alcohol-by-volume (ABV) is considered alcohol-free because our body metabolizes that amount of alcohol faster than we can feel any effect.

More commonly world-wide, any product containing 0.5% ABV or less is considered alcohol-free.

Fun fact: many foods have some level of ABV due to their natural fermentation. Kombucha, breads made with yeast, overripe bananas, fruit juice, yogurt, soy sauces & vinegars can range from 0.2% ABV up to 1.2% ABV.

The Craft Winemaking Architecture

  • Tri-Varietal Austrian Cuvée: Composed of Grüner Veltliner (providing structural white pepper and acidity), Gelber Muskateller (providing lifted floral aromatics), and Rivaner (bringing round orchard fruit).
  • Advanced Vacuum Distillation & Aroma Recovery: Captures volatile aroma compounds directly from the extracted alcohol portion and re-integrates them into the dealcoholized base.
  • Authentic 6 Bar Pressure: Finished under natural cork at 6 bar of carbonation pressure to ensure authentic sparkling wine texture, mousse density, and longevity in the glass.
  • Low-Calorie & Clean Certified: Certified vegan, halal, and low-sugar at just 14 kcal / 59 kJ per 100ml with 6.0 g/L of natural balancing fruit acidity.

Pro-Tip: Skip traditional champagne flutes for Zeronimo Sparkling Select. Pouring this blend into a wide-bowled Riesling or white wine glass gives the Gelber Muskateller and Grüner Veltliner aromatics room to expand, revealing layered pineapple and elderflower notes that narrow flute glasses tend to trap.
