Crisp green apple, ripe Danube apricot, bright lemon zest, floral blossom, and cool Wagram minerality. An authentic, single-varietal Austrian white wine crafted from 40-year-old vines.

Crafted by the renowned Austrian estate Heribert Bayer / In Signo Leonis, Zeronimo Grüner Veltliner represents the debut still white wine of the Zeronimo collection. Sourced from 40-year-old deep-rooted vines in the famed Wagram wine region, this expression is vinified traditionally as a bone-dry white wine in temperature-controlled stainless steel tanks before undergoing gentle low-temperature vacuum dealcoholization.

To preserve the delicate, signature volatile aromatics of Austria’s flagship grape, the winery employs a multi-day aroma recovery system that extracts the natural grape esters from the removed alcohol stream and re-integrates them into the wine. At less than 0.3% residual alcohol (12.3 kcal and 2.2g sugar per 100ml), this certified halal, vegan, and low-calorie bottling delivers a taut 6.0 g/L acidity balanced against 21 g/L natural residual grape sugars, providing classic varietal typicity, refreshing drinkability, and outstanding culinary versatility.

Pale straw pour with green reflections, green apple and apricot aromas, crisp citrus-mineral core, and an animated dry finish—<0.3% ABV, estate-bottled from Wagram vines.

TASTING NOTES

The Appearance: Pale straw-yellow with luminous greenish reflections and brilliant clarity in the glass.

The Aroma: Vibrant, fresh, and expressive. Opens with pronounced notes of crisp green Granny Smith apple, sun-ripened apricot (Marille), and freshly grated lemon zest, layered with delicate white orchard blossoms and a hint of white pepper spice.

The Palate: Light, energetic, and finely textured. Juicy stone fruit and crisp orchard apple lead the entry, balanced by refreshing citrus acidity, cool loess-soil minerality, and a harmoniously integrated mid-palate.

The Finish: Crisp, clean, and animated, leaving a mouth-watering trail of lemon peel, tart green apple skin, and a subtle mineral snap that cleanses the palate.

Frequently Asked Questions — Zeronimo - Grüner Veltliner

Expert answers to common questions about non-alcoholic options, ingredients, and delivery across Canada.

How should I store premium de-alcoholized wine after opening?

Because alcohol acts as a preservative, de-alcoholized wines (like Benjamin Bridge or Dr. Zenzen) should be tightly sealed, refrigerated immediately after opening, and consumed within 3–5 days for optimal flavor.

What are 'Proxies' or 'Alternative' wines?

Proxies are sophisticated, non-alcoholic beverages crafted using tea, juices, spices, bitters, and vinegar to mimic the complexity, tannins, and acidity of wine—without relying on fermentation.

What are the benefits of joining the Søbr Wine Club?

Members receive exclusive access to new releases, monthly curated selections, and special member pricing. It is the easiest way to explore our curated selection of non-alcoholic wines without the guesswork.

What is the difference between '0.0% ABV' and 'Non-Alcoholic?

Products labeled 0.0% ABV contain absolutely no alcohol. Some products labeled 'non-alcoholic' may contain trace amounts of alcohol (less than 0.5% ABV), which is similar to the levels found in ripe fruit or fruit juice.

Is 0.5% really alcohol-free?

In Canada, any product containing less than 1.1% alcohol-by-volume (ABV) is considered alcohol-free because our body metabolizes that amount of alcohol faster than we can feel any effect.

More commonly world-wide, any product containing 0.5% ABV or less is considered alcohol-free.

Fun fact: many foods have some level of ABV due to their natural fermentation. Kombucha, breads made with yeast, overripe bananas, fruit juice, yogurt, soy sauces & vinegars can range from 0.2% ABV up to 1.2% ABV.

The Craft Winemaking Architecture

  • 100% Wagram Terroir: Sourced entirely from 40+ year-old Grüner Veltliner vines in the Wagram region, known for rich loess soils that impart depth, stone fruit character, and mineral structure.
  • Classic Stainless Steel Vinification: Fermented dry in stainless steel tanks to maintain purity of fruit, vibrant natural acidity, and energetic aromatics prior to dealcoholization.
  • Multi-Day Aroma Recovery: Gentle vacuum evaporation paired with a multi-day extraction loop recaptures natural volatile bouquet compounds from the alcohol phase and restores them to the finished wine.
  • Gastronomic Balance: Structured with 6.0 g/L of natural fruit acidity balancing 21 g/L of residual grape sugars at just 12.3 kcal / 52 kJ per 100ml.

Pro-Tip: Grüner Veltliner is widely regarded by sommeliers as one of the world's most versatile food wines. Because of its 6.0 g/L crisp fruit acidity and refreshing stone-fruit profile, Zeronimo Grüner Veltliner cuts straight through the richness of fried schnitzel or tempura without leaving any sweet or heavy residue on the palate.
