Fin Soda - Haskap Berry / Balsam Fir

When we started working on the haskap soda, we wanted to do a fruity, seasonal beverage without using the usual suspect, the strawberry. We knew about haskap, this Nordic berry that grows in many Canadian provinces. It looks like a long fat blueberry and tastes like a mix of cranberry, blueberry, and cassis. It has a beautiful acidity and an even more beautiful color. Our haskap soda was supposed to be a seasonal edition, as berries grow in the summer. But we found out that they are so fragile, that they need to be frozen as soon as they are picked. That meant we could get Quebec haskap berries anytime. We partnered with a group of local producers and are now offering our drink all year long.
